Tex-Mex Steak Quesadilla

Yes, you sure did lose to this Quesadilla because it rocks! Here's how to make it yourself...

Servings: 8 Quesadilla Slices

In a medium bowl, combine Mayo, Sour Cream, Cumin, Cilantro, Lime Zest & Juice, Chipotle Tabasco, and seasoning.
Transfer to squirt bottle if desired. Refrigerate. The flavors will get better overnight!

Shuck the ears of corn, removing silk.
Grill corn on grill or on open range burner (my preferred method) until roasted to desired doneness. This process bring out the sweetness of the corn!
Finely dice bell peppers and red onions.
Once cooled, carefully cut corn off the cob. I LOVE USING THIS GADGET.
In a large pan or skillet, heat up 2-3 Tbsp of oil. Saute Bell Peppers and Onions together. Once they begin to soften, season with OG Spice Rub or Food Truck Seasoning. Cook until desired tenderness. I prefer them to be soft, helping them melt into the final product.
In a large bowl, combine cooked Peppers & Onions, Corn, and cilantro.
Taste the salsa and add more seasoning if desired.

Shred Cheese and mix together
Heat a flat top, or large skillet over medium heat.
Spray cooking surface with cooking spray.
Carefully place tortilla on cooking surface (move fast so you don't burn the quesadilla!)
Sprinkle a layer of cheese over half of the tortilla. Top with Roasted Corn Salsa, Cooked Steak, More cheese and drizzle with Tex-Mex Sauce.
Fold half of the tortilla over the filling to create a half-moon.
Flip tortilla once bottom is lightly browned. Continue cooking other side to desired crunchiness.
Remove quesadilla from heat, and allow to rest for a couple of minutes. Otherwise the cheese will just ooze out.
Slice Quesadilla, drizzle with Tex-Mex Sauce, and garnish with fresh cilantro.
On Food Network, I served it with BBQ Sauce as well! This recipe is perfect with Bourbon BBQ Sauce.
